Scrambled Sandwich

Ingredients

  • 1 pita bread round
  • 2 tomato slices
  • 2 eggs
  • 1 Tbsp milk
  • dash pepper
  • 2 tsp margarine or butter
  • 1/4 c shredded cheddar or Monterey Jack cheese w/ jalapeno peppers
  • 1 Tbsp cooked bacon pieces

Directions

Cut pita bread in half. Open pockets. Place 1 tomato slice in each pita bread half. In a small bowl, beat eggs, milk and pepper.

In a 6-inch skillet melt margarine. Pour egg mixture into skillet. Cook over medium heat for 1 minute, without stirring. Sprinkle with cheese and bacon pieces. Stir egg mixture. Continue cooking over medium heat about 2 minutes or till eggs are cooked, but still moist. Spoon eggs into pita bread halves. Serve immediately.
